I like sweet potatoes but until recently I did not know it has so many health benefits to it also. So I started to stock sweet potatoes whenever I find them and they also have a good shelf life like potatoes. These are very easy to cook and can be a satisfying evening snack or dessert.

Ingredients

  • 3-4 sweet potatoes
  • ¼ cup- coconut flakes(dry or fresh)
  • 3-4 tsp- sugar

Directions

  1. Cut the sweet potatoes into 2-3 big pieces.
  2. Bake it at 400 degeress F for 20-25 minutes or cook them in pressure cooker for 1 min , making sure it is not placed inside water else the potatoes gets soggy.(use steamer).
  3. Remove the outer layer of the sweet potatoes once it is cooked
  4. Smash it with a fork and plate it in serving bowls.
  5. Sprinkle the coconut flakes and the sugar and its ready to eat.
