Spinach Rice

I picked up a huge bag of spinach this week and from then, finding ways to cook with it. This is a simple and easy recipe which does not take more than 10 minutes of cooking time. Spinach dhal  or palak paneer  are the  common dishes which are prepared with spinach, but we cannot add lots of spinach in these dishes . In this rice you add lots of spinach and happily cross your checklist for the greens.

Ingredients

  • 1 cup rice -cooked
  • 2-3 cups- spinach
  • 1 onion- chopped
  • 5-6 garlic clove
  • 1tsp- cumin seeds
  • 1 tsp- chilli flakes
  • 2-3 tsp- olive oil
  • Salt to taste

Directions

  1. Heat a pan with little oil and add cumins and red chilli flakes.
  2. Add in the chopped onions to it and fry till its turns transparent and then add the chopped garlic.
  3. Meanwhile wash and soak the spinach in a big pot of water, so that the dirt and sand settles down in water.
  4. Take the spinach out which floats on top and put in a colander for 5-10 mins to drains the excess water (Do not drain the water and spinach together).
  5. Finely chop the spinach and add it to the sautéed onions and garlic.
  6. Add little salt and close the pan with lid for a min.(spinach cooks very fast, do not overcook it.)
  7. Add the cooked rice to the spinach and stir for a min or two.
  8. Garnish with chopped coriander leaves and its ready to be served.

Benefits of spinach

  • Spinach is loaded with flavonoids which act as antioxidants, protecting the body from free radicals and helps from aging.
  • A component of spinach, factor C0-Q10 which is an anti-oxidant, plays important role in strengthening muscles especially heart muscle which continuously pumps blood to all parts of the body(treats hypertension and heart failure).
  • The vitamin K provided by spinach is important for maintaining bone health.
  • Folate found in spinach is needed by the growing foetus for proper development of new nervous system.
  • ‘Popeye’, the sailor man is known for his obsession for spinach-eating and getting strong.Its true that  infants  and kids must be fed with spinach which is a rich in protein, vitamins minerals. They will have proportionate development in their growing stages.
  • Spinach is excellent source of iron. Iron is an integral component of hemoglobin, which transports oxygen from the lungs to all body cells, and is also part of key enzyme systems for energy production and metabolism.

Good one… I do the same with methi/turnip and mustard leaves . Also another important point I found out is never to reheat greens .. as the nitrites that gets produced on reheating greens is toxic …

toxic released from reheating greens, not heard abt it much , but will keep that in mind, thanks for the info
