One evening back from work, I was in no mood of cooking anything elaborate but wanted to finish the spinach which I bought earlier that week. I was planning on making dosas and only chutney was instant to make with it and thought why not make it with spinach. This is a very healthy and simple chutney which can be made 5-10 minutes by steaming the spinach and onions in microwave and grinding it with peanuts and chillis.
Ingredients
- 2 cups- washed and chopped spinach
- ¼ onion- chopped
- 4-5 tsp peanuts
- 1-2- red/green chilles(acc to spice)
- Salt to taste
Directions
- In a microwave steam the washed and chopped spinach (make sure all the water is drained out before steaming it) along with onions for 2-3 mins.
- Now allow the spinach to cool before grinding it ( to avoid the spill of chutney due to steam developed)
- Meanwhile grind the peanuts and chillies coarsely and then add the steam spinach and onion to it.
- Add salt as per taste and its ready to be served. Goes well with dosas and rice also .
