One evening back from work, I was in no mood of cooking anything elaborate but wanted to finish the spinach which I bought earlier that week. I was planning on making dosas and only chutney was instant to make with it and thought why not make it with spinach. This is a very healthy and simple chutney which can be made 5-10 minutes by steaming the spinach and onions in microwave and grinding it with peanuts and chillis.

Ingredients

  • 2 cups- washed and chopped spinach
  • ¼ onion- chopped
  • 4-5 tsp peanuts
  • 1-2- red/green chilles(acc to spice)
  • Salt to taste

Directions

  1. In a microwave steam the washed and chopped spinach (make sure all the water is drained out before steaming it) along with onions for 2-3 mins.
  2. Now allow the spinach to cool before grinding it ( to avoid the spill of chutney due to steam developed)
  3. Meanwhile grind the peanuts and chillies coarsely and then add the steam spinach and onion to it.
  4. Add salt as per taste and its ready to be served. Goes well with dosas and rice also .

  • Spinach is loaded with flavonoids which act as antioxidants, protecting the body from free radicals.
  • Other of the benefits of spinach is that this is a heart-healthy food. It’s an outstanding source of vitamins C and A which are antioxidants that help reduce free radical amounts in the body. The antioxidants work to keep cholesterol from oxidizing.
