Chow mien is one of the famous noodles in all Chinese restaurants which we all love to order when we dine. But it loaded with oil and the noodles is made with white flour and not whole wheat. With little ingredients in your pantry you can make a tasty and healthy version of chow mien at home and enjoy it often. You can add any vegetable which you have in hand (cabbage, carrots, celery,bok choy, bell pepper,bean sprouts, soyabeans, mushrooms, spinach,zuccini).
Ingredients
- ½ pound soba noodles/whole wheat spaghetti
- 3 cloves garlic- minced
- 2 tsp ginger- finely chopped
- 2 tsp- sesame /olive oil
- 3 green scallion(spring onions)- chopped
- 1 stalk celery- thinly sliced
- ½ onion- thinly sliced
- 1 carrot- thinly sliced
- ½ pound broccoli- chopped
Sauce Mixture
- 1 tsp- oyster sauce
- 1 tsp- soya sauce
- 1 tsp- rice wine/white vinegar
- 1 tsp- chilli sauce
- salt to taste
Directions
- Boil water in a big pot with some salt.
- Add the noodles/spaghetti in boiling water and cook it as per the package instructions.
- Rinse the noodles in cold water immediately(else the noodles will be overcooked) and drain properly.
- Meanwhile heat a pan, add some oil and fry the chopped ginger and garlic.
- Add the while part of scallions, onions and celery and stir fry for 2-3 mins.
- Add the remaining chopped vegetable and stir fry for another 2-3 mins( do not over cook the vegetables).
- Now add the sauce mixture and salt to the vegetables.( add less salt coz soya sauce contains sodium/salt in it).
- Finally toss in the drained noodles and add some oil (noodles does not stick and gives a shiny and restaurant look).
- Continue to stir still the noodles are well blended .
- Garnish with some chopped green onions and its ready to be served.
Note: Oyster sauce gives the exact taste and make sure you do not add excess of it. You can substitute oyster sauce by adding more soya sauce and ground bean sauce.
