There are days when I run out of time to prepare lunch and this is my fast and easy side dish which I love to prepare with potatoes. I first precook them in microwave and stir fry them on pan to get a crispy texture. Keep the skins on as it has more fibre and gives a crispy texture to potatoes. I have heard many say ‘ no’ potatoes as they are high in calories, but the truth is the amount of fat they add to it during the cooking process like french fries .

Ingredients

  • 2-3 -medium sized potatoes
  • ½ tsp- cumin seeds
  • 1 tsp -chilli powder
  • ½ tsp- cumin powder
  • ½ tsp – turmeric powder
  • ½ tsp – amchoor (dried mango) powder- optional
  • salt to taste
  • 2-3 tsp -olive oil

Directions

  1. Soak the potatoes in water for a min or two before rubbing the dirt off the skin.
  2. Chop the potatoes in small pieces (with skins) and put in a microwave vessel.
  3. Microwave the potatoes on high for 3-5 min (¾ cooked)with the lid closed and no need to add water.
  4. Simultaneously heat the pan ,pour some oil and then add cumin seeds.
  5. Now add the chilli, cumin ,amchoor and turmeric powder along with salt to the heated oil.(make sure the mixture does not burn or add 1-2 tsp of water)
  6. Mix in the cooked potatoes to this spice mixture and allow it to fry in the pan for 5-10 minutes till the potatoes gets golden and crispy(add another tsp of oil if necessary).
  7. Ready to be served with rice or simply as an appetizer.

Benefits of potatoes

  • Potato skins store many nutrients and also contain a lot of fiber, which is essential for a healthy diet. Leaving the potato skins on also helps preserve the nutrients in the flesh of the potato, which have a tendency to escape during cooking.
  • Potatoes are classified as a tuber, meaning bulb or root, and contain a protein called patatin which works as an effective antioxidant and helps to lower blood pressure.

This is the yummiest n easiest potato fry I have ever had, earlier to make it crispy I end up using lot of oil, but nowadays with this recipe of yours I am using only 1 tablespoon of oil…Great work , keep going
