One evening, I was in the mood for pizza, but did not prepare the pizza dough nor had the patience to order for one. So I prepared a similar version with the store bought rye bread (that’s why the bread is dark brown in the picture) which I had at home, but you can try with any bread and top it with any vegetables and meat which you would like on a traditional pizza.
Ingredients
- 4-6 – slices of bread (whole wheat)
- ½ cup- tomato paste/puree/ketchup
- 1 red onion- finely chopped
- 1 Red/green bell pepper- chopped
- 10-Black olives- sliced
- ¼ cup – mozzarella or any low fat cheese(grated)
- ½ tsp- crushed red chilli flakes
- ½ tsp- dried oregano and basil( optional)
- Salt to taste
Directions
- Toast the bread in a toaster or pan.( This results in crispy bottom and bread does not get soggy)
- Preheat the oven in broiler mode
- Arrange the breads on a oven pan/sheet after spraying some olive oil , so that bread does not stick to pan.
- Now spread the tomato paste/puree on the top of the bread(you can place fresh sliced tomatoes instead).
- Add the chopped vegetables and onions on it.
- Sprinkle some salt, red chilli flakes, oregano and basil on it.
- Top it with the grated cheese and place it under the broiler for 3-6 minutes( depending on your oven) until the cheese melts and blends.
- Remove from oven and allow it to cool for 2-5 minutes before serving.
