I love to make these healthy ,instant dosas whenever I have noting planned ahead for my dinner.Millet is tasty, with a mildly sweet, nut-like flavor and contains a myriad of beneficial nutrients. In India , its used in most of health drinks and given to people who are weak or thin to gain strength and weight.

Ingredients:

  • 2 cups raagi flour

  • 1/3 cup rice flour( for crispy thin dosas )

  • ½ cup Wheat flour

  • 1/2 – 1 cup thin buttermilk or 1/3 cup beaten curd or yogurt

  • 1 tsp jeera( cumin seeds )

  • 1 onion chopped finely

  • bunch of coriander leaves chopped finely

  • 5 green chillies

  • 10 curry leaves(optional)

  • olive oil as required

  • salt to taste

Preparation: ragi-ongriddle

  1. Mix the dry ingredients raagi flour, rice flour and salt into a bowl

  2. Add buttermilk and mix together

  3. You will need to mix in water to bring into slightly thicker consistency .

  4. Mix green chillies, curry leaves, salt , cumin seeds and coriander.

  5. Mix thoroughly and set aside for 15 – 30 mins( optional ).Its helps for all flavors to mix well.

  6. Heat griddle until sizzling hot .

  7. Pour the dosa batter just like normal dosa.

  8. Sprinkle the finely choppped onions on top and you can press it to dosa with spatula if its does not stick to dosa.

  9. Add few drops of olive oil onto the edges and cook on both sides

  10. Transfer to a plate and relish it while hot with coconut chutney or onion chutney.

Tip: Sprinkling the onions on dosas finally instead of mixing it with the batter helps in getting more thinner and crisp dosas.
