This is an easy ,power-packed soup which you can have it as a meal for dinner . I made this one when my hubby was suffering from cold. I added all the natural remedies (cumin, ginger , turmeric)which will help to relieve cold and congestion . This soup is very healthy as it has the protien from lentils, fibre and other nutrients from the vegetables. You can also add any meat like chicken or mutton in this soup for extra flavor.i have used the whole lentils as they are higher in fiber compared to split ones.
Ingredients
- ¾ cup -lentils ( whole or split masoor dhal)
- ½ onions- chopped
- 2 stems- celery chopped
- 2 carrots -chopped
- 2-3 tomatoes – chopped or ½ cup canned tomato
- 2-3garlic pods -chopped
- 2 tsp -ginger grated
- 2-3 green chilis chopped
- 1-2 tsp -cumin powder
- ½ tsp -turmeric powder
- ¼ cup -coriander or parsley leaves chopped
- Salt to taste
- 1-2 tsp olive oil
Directions
- Wash and soak the lentils for min 5-15 mins in 2 cups of water.
- In a pressure cooker heat some oil , add green chillis,chopped onions , celery and carrots.
- Saute them for 2-3 mins tills the onions gets transparent.
- Now add tomatoes and saute for another 5 mins .
- Add the soaked lentils along with its soaked water to the cooker.
- Stir in the cumin powder, ginger, turmeric and salt.
- Close the pressure cooker, place whistle and allow the soup to cook in medium flame 1-2 whistles.
- Once pressure goes down, open the cooker and mix the soup .
- Sprinkle the chopped garlic and coriander/parsley leaves .
- Serve it in a soup bowl along with toasted bread .
