This is my signature dish in which I have used hot dates sauce.Buffalo wings is one of the favorite appetizer in Pizza joints or in pubs. My hubby likes buffalo wings but I always try to avoid it ,as the wings is one of the parts in chicken which has high amount of fat stored in it. But some favorites you can never avoid totally. So instead of the traditional method of deep frying them, I thought I should steam them 1st to drain some fat and then bake them to get the crispy texture.
Ingredients
- 10-12 -chicken wings
- 1 tsp- butter/olive oil
- 2-3 clove garlic- minced/grated
- 1/4 cup- hot date sauce
- 1 tsp-chilli powder
- Salt to taste
Chilli date sauce
- 8-10 dates
- 1/2 cup- warm water
- 2-3 tsp- vinegar
- 3-6 dried red chilli( depending on spice level)
- salt to taste
Directions
- Marinate chicken for 15-30 mins with salt and chilli powder( optional step).
- In a big pot , boil some water. Meanwhile place the chicken wings in a steamer basket and place it in
the pot , close with the lid and allow it to steam for 10 mins.( You can use idly stand and its plates to steam the wings instead.) - Remove the wings from the basket and carefully pat dry with paper towels.
- Preheat the oven to 425 degrees F.
- Roast on the middle rack of the oven for 20 minutes. Turn the wings over and cook another 20 minutes or until meat is cooked through and the skin is golden brown. ( If you dont have 40 mins, place wings under th broiler and set over in broil for 10 min, stirring the wings for every 2-3 mins, so its evenly browned).
- While the chicken is roasting, melt the butter/oil in a pan along with the garlic.
- Pour hot date sauce and stir to combine.
- Remove the wings from the oven( try to drain the excess fat which came out during baking with paper towel)
- Transfer to the pan and toss with the sauce fo2-3 mins.
- Sprinkle some spring onions on top .Serve warm.
Hot date sauce
- Soak the dates and dried red chillies in the warm water. (Close it with a lid, so it softens faster)
- Grind the dates, chilli in a blender.
- Add some salt and vinegar and mix well.

- Dates are also an excellent remedy for alcoholic intoxication.
