Guilt-free Carrot Cake

It was my hubby bday and he wanted a cake which was healthy and that he would eat it guilt free. Surprising to hear such things from him as he luvs all the fatty stuff and usually bday is an excuse to have them all. I decided to spend a few hours in searching for a recipe which is tasty and heart healthy. Finally I came with a version which I thought will be tasty and to my surprise it did. He just loved it . I have added wheat flour and oil in this cake instead of butter and all purpose flour. So this cake is high in fiber and less in fat. Enjoy it!!

Ingredients

  • 3/4 cup whole-wheat pastry flour
  • 1/2 cup all-purpose flour
  • 1 ½ cups of shredded carrots( app 2 medium carrots)
  • 1/4 teaspoon ground allspice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking powder
  • 1 /2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 eggs
  • 3/4 cup brown sugar
  • ½ cup apple puree( puree ½ apple with skin)
  • 1/4 cup canola oil
  • 1/4-1/2 cup chopped walnuts

 

Directions

  1. Preheat the oven to 350 degrees F.
  2. spread little olive oil on a 9-inch round cake pan. Line the bottom with parchment paper. Set aside .
  3. Put the flour, baking powder, baking soda, spices, and salt in the bowl and whisk it together.
  4. Grate the carrots and keep it aside.
  5. Now beat the eggs ,apple sauce with the brown sugar using a hand mixer or a whisk till it is well combined.
  6. Drizzle in the canola oil to the mixture and continue until combined for a minute.
  7. Now combine the dry ingredients(flour mixture) with the grated carrots and add to the liquid mixture .
  8. Mix till its combined.
  9. Add the chopped walnuts .
  10. Pour into the prepared cake pan and bake on the middle rack of the oven for 35-45 minutes (Bake until a toothpick comes out clean of cake).
  11. Remove the pan from the oven and allow cake to cool 15 minutes in the pan. After 15 minutes, turn the cake out onto a rack and allow cake to cool completely.
  12. Serve it with cream cheese frosting or plain.

Benefits of Carrots

  • Carrots are an excellent source of antioxidant compounds (beta carotene helps in combating the free radicals).
  • Beta-carotene also helps to protect vision, especially night vision.
  • One of carrots’ fat-fighting features is their respectable fiber content and soluble fiber in it may help lower blood-cholesterol levels .
  • Carrot is good for blood sugar regulation because of the presence of carotenoids in carrot. Carotenoids inversely affect insulin resistance and thus lower blood sugar.

Hi Indra, can we substitute whole wheat pastry with our normal wheat flour?

yes you substitute with normal wheat flour, but pastry flour gives more softness to the cake
