Dinner in a bowl

Ingredients 

  • 1 cup black /pinto/kidney beans  
  • 1 cup diced tomatoes
  • 1/2 onion, diced
  • 3 cloves garlic, minced
  • 1 tsp grated ginger
  • 2 sticks of celery diced
  • 2 carrots diced
  • 2 tbsp olive oil
  • 1 cup cooked whole wheat pasta
  • 1 tbsp chili powder
  • 1/2 tsp cumin powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup chopped parsley/cilantro
  • 2 cups water /chicken stock/vegetable stock

Directions

1. Soak the beans for 8 hrs

2. In a pressure cooker heat the oil over medium-high heat.

3. Add the onions and keep stirring until soft, about 3 minutes.

4. Add the garlic, celery, carrot and ginger, and cook, stirring.

5. Now add the diced tomatoes.

6. Add the chili powder, cumin, salt, pepper and parsley/cilantro and cook, stirring, until fragrant, about 30 seconds

7. Add the beans and water stir well, and bring to a boil.

8. Reduce the heat to medium-low and pressure cook it for 20 mins till the beans is soft.

9. Now add the cooked pasta to it and serve it a bowl.
