Whenever I have guests home for lunch or dinner, I think a lot of what healthy desserts I can serve them. Since Dates are termed as a crown of sweets and ideal food which easily balances and digests food , I thought I should prepare something using it. Date nut roll is one option which I searched in net and found that most of the recipes have butter and cream added to it. So I have come up with a simpler recipe which has noting but dates and nuts in it. You can add any nut which you have at home. I have added almonds and walnuts.
Ingredients
- Pitted Dates- 1 lb
- Almonds- 20
- Walnuts- 5
- Olive oil
Directions
- Put the walnuts and half the almonds in the bowl of a food processor and pulse until finely chopped, but not powdery. Place it in a bowl and set aside.
- Likewise put the dates in a food processor and pulse till they are finely chopped but not too sticky.
- Now add the dates to the nuts mixture.
- Spray some olive oil in hand, so that the mixture does not stick to your hand.
- Combine dates and nuts using your hands till they are fully mixed.
- Shape the mixture into 24 walnut size balls.
- For an attractive look place an almond(cut in half) on the top of each roll and tighten it from the end to give a finished look.
- Store in an airtight container and place in a refrigerator.
