Ingredients

Crepe

  • 2 large eggs
  • 1 cup low fat milk
  • 1/4 cup water
  • 1/2 cup Whole Wheat flour
  • 1/2 cup All purpose flour
  • 1 tablespoon  butter melted
  • ½ teaspoon salt
  • 2 tablespoon olive oil
  • Cooking spray for coating the pan

Filling

  • 2 sticks celery, finely chopped
  • 2 chicken breasts, skin removed
  • 2 tsp olive oil
  • 1 carrot, thinly sliced
  • 1 onion, thinly sliced
  • 3 -4 cloves of garlic chopped
  • 1-2 tomato finely chopped
  • 1 bell pepper thinly sliced
  • ½ tsp chili flakes
  • 1 tsp chili sauce
  • 1 tsp salt
  • 2-3 tsp of dried parsley or ¼ cup fresh parsley
  • ½ tsp oregano

Directions

Crepe:

1. In a blender, combine all of the ingredients and pulse for 10 seconds.

2. Place the crepe batter in the refrigerator for 1 hour at least so that the bubbles settles down.

3. This allows the bubbles to subside so the crepes will be less likely to tear during cooking. The batter can be stored up to 48 hours.

4. Heat a small non-stick pan and use the cooking spray to coat.

5. Pour 1-2 ladle of batter into the center of the pan and swirl to spread evenly.

6. Cook for 30 seconds -1 min in medium flame and flip. Cooking on slow flames gives a crispy texture to the crepe.

7. Cook for another 10 seconds and remove to the plate.

8. Place the filling in the middle of the crepe and roll it.

9. You can stack cooled crepes and store in resealable plastic bags in the refrigerator for several days or in the freezer for up to two months.

10. When using frozen crepes, thaw on a rack before gently peeling apart.

Filling:

1. Poach celery and chicken for 10-15 minutes in boiling water.

2. Remove chicken and once cooled, shred the chicken with fork or hand.

3. Pour some olive oil in the pan and add the onion ,garlic and bell pepper and fry.

4. Add the sliced carrot and tomatoes and stir for 5 mins.

5. Add the poached celery with the chicken stock to the pan and allow it to cook for 5-10 mins still the sauce becomes thick.

6. Add the salt,chili flakes ,chili sauce, oregano, parsley .
