Most of Friday nights , its wine and dine at home along with a movie. I make sure there are some appetizers and last week I was thinking of something different which I can make quick and easy. Had some chicken breast pieces defrosted and was looking for something to top to give a crunchy taste. Suddenly thought why not give the cereals (cornflakes) a try and I might getting something sweet and spicy if I added more spice to the marination.
Ingredients
- 1lb -chicken breasts cubed
- 1 egg beaten
- 1-2 tsp -chilli powder(acc to spice)
- 1 tsp- vinegar(optional)
- ½ tsp pepper powder
- salt to taste
- 1 cup- crushed cornflakes
- ½ cup – all purpose flour
Directions
- Combine the chicken pieces with the egg, vinegar, chilli powder, pepper powder and salt .
- Allow the mixture to marinate for about 5-10 minutes.
- Meanwhile crumble or crush the cornflakes with a rolling pin or hand and transfer to a shallow bowl and mix it with all purpose flour.
- Now take the marinated chicken and dip each piece in the cereal mixture till all the sides of chicken are well coated. You can also put the cereal mixture in a zip-lock cover and put the chicken pieces inside and give it a good shake to get the coating.
- Once all the chicken pieces are coated you can pan fry them with little oil or arrange them on a baking sheet and bake them at 400 degrees F for about 8-10 minutes till it gets crispy(make sure you preheat the oven).
- Its ready to be served with tomato or any dipping sauce.
Note- Chicken breast pieces cook very fast when compared to the thigh pieces and has a tendency to become rubbery if they are over cooked . Make sure you dont cook them for more than 5-7 mins.
