Chilli Parota

My hubby was tempted by seeing a scene in movie where they served chilli borota. So I thought I should prepare healthy version at home as the original version is made with barotas made with lard or other fats and in excess oil. You can make these with left over rotis .

Ingredients

  • 4-6 Rotis
  • 1 medium onion thinly sliced
  • 1 -2 bellpepper – thinly sliced
  • 1-2 tomatos chopped
  • 1-2 tsp ginger garlic paste
  • 2-3 eggs beaten(optional)
  • 1-2 green chillis chopped
  • 1 tsp chilli powder
  • ¼ tsp turmeric powder
  • ½ tsp garam masala/cumin powder
  • 2-3 tsp olive oil
  • salt to taste
  • Chopped coriander leaves(garnish)

Direction

  1. Heat the left over rotis on a pan till its warm or become crispy( Microwave it for 30sec- 1 min).
  2. Cut the rotis in small size pieces
  3. Now in a pan, heat some oil and saute the onions and chopped chilis.
  4. When it get transparent , add ginger garlic paste to it and stir till the raw smell goes.
  5. Then add the chopped tomatoes and saute for 3-5 mins.
  6. Now add the chilli powder and turmeric along with salt and add the chopped bellpepper to it.
  7. Once this comes together add the chopped rotis and stir for a minute.
  8. Now add the beaten eggs seasoned with salt to the pan and keep stirring till the eggs forms a coating on the rotis .
  9. Keep stirring for 5 minutes and add a little more oil for it to get a bit crunchy.
  10. Garnish with coriander leaves and its ready to serve with tomato sauce on the side.

Looks good Indra..I’ve tried something similar with frozen parottas..ovbiously this one is healthy! :)

Ya, its an easy dish when you dont have time. You can try with frozen chapatis instead of parathas as they are loaded with fat. Small changes goes a long way.
