One afternoon, I was in no mood to prepare lunch and so raided my fridge for leftovers and ended up only having some cooked cauliflower , rotis and some raw eggs.I thought why not make something different out of these and to my surprise, it turned out good. Cauliflower and eggs pair up very well , but if you don’t want to use eggs , you can use cheese as a binding agent which holds it like a sandwich.
Ingredients
Cauliflower mixture
- 1-2 cups-Cauliflower florets(finely chopped)
- ½ onion- chopped
- 1 tsp –garlic paste or chopped
- 2 – green chillies chopped
- ½ tsp chilli powder
- ½ tsp cumin powder
- ¼ tsp- turmeric powder
- Salt to taste
- Chopped coriander leaves(optional)
Assembly
- 4-5 Rotis/tortillas
- 2-3 eggs- beaten
Directions
- Preheat the oil in a pan, add the onions and green chillies and sauté till the onions become transparent.

- Add the garlic and the chopped cauliflower and allow it to cook for about 5 mins.
- Now add the turmeric ,chilli and cumin powder along with salt and sauté for another 5 mins.
- Once the mixture comes together add the chopped coriander and it to cool .
Assembly
- Heat the griddle and place the roti on it.
- Now arrange the cauliflower mixture such that it fills half the roti/tortilla and then pour the beaten egg (seasoned with salt and pepper) and close the other half of roti over it.
- Allow the egg to cook and bind inside with cauliflower(slow- medium flame).
- Pour some oil on the edges to get a crispy texture on the rotis.
- Once its done, cut it in half and serve it with ketchup or raitha.
Note: You can substitute eggs with cheese also.
