I love carrots and one fine morning, when I checked my refrigerator, I had nothing left except for some carrots. I was running short of time and thought the one thing I can do quick is  a carrot rice for lunch. This is a very simple, easy and nutritionist dish. Since this rice does not have much protein in them, you can add some peanuts or cashews , to keep you full for a longer time.

Ingredients

  • 1 cup- cooked rice
  • 3 big carrots- grated
  • ½ onions- chopped
  • ¼ cup- cashews/groundnuts chopped or crushed
  • 1 tsp- cumin seeds
  • ½ tsp- cumin powder
  • ¼ tsp- turmeric powder(optional)
  • 4 cloves –garlic chopped
  • 2-3 – green chilli /red chilly crushed
  • Salt to taste
  • Cilantro for garnish

Direction

  1. Cook rice till its almost done and spread on a plate for it cool.(you also leftover or refrigerated rice).
  2. Heat a pan with little oil and add cumin , red/green chillies followed by onions.
  3. Fry the onions till its transparent and stir in the garlic and grated carrots.
  4. Add salt , turmeric and cumin powder and let its sauté for about 5 minutes.
  5. Stir in the cooked rice and pour 1-2 tsp oil on rice so it does not stick.
  6. Add the chopped nuts and garnish it with chopped coriander leaves.

Benefit of carrots

  • Carrot can improve the appearance of the skin, hair and nails.
  • Beta-carotene in carrots can help improve eyesight ,especially night vision.
  • Carrots are an excellent source of antioxidant compounds, and the richest vegetable source of the pro-vitamin A carotenes.
  • Carrot is good for blood sugar regulation because of the presence of carotenoids in carrot. Carotenoids inversely affect insulin resistance and thus lower blood sugar.
  • A carrot a day reduces stroke risk by 68 percent. Many studies have strengthened the “carrot effect” on brain.
