Isn’t it weird with such a name? But when your on a diet, its very difficult to eat such high calorie items like butter chicken which has a lot of butter as per the name. My aunt was a specialist in this item and every time we visit her place , this used to be the must item in menu . Recently I got the recipe from her and tried to do a less butter recipe and with olive oil and to my surprise it did come out close to the original recipe. Tastes great with naan or rotis.
Ingredients

4 – Skinless Chicken Thighs

½ can – Tomato puree

½ tsp- cumin – crushed

½ tsp – Fennel seeds- crushed

1 tsp- chili powder
-
½ tsp– coriander seeds

¼ tsp – Turmeric powder

1 ½ tsp – ginger garlic paste

1 tsp – butter\ghee
-
olive oil

Salt to taste
Directions

Cook the Chicken in water with salt, turmeric, ginger garlic paste and chili powder.

Now once the chicken is cooked , remove the chicken from the stock and allow it to cool.

Pull the chicken pieces in strips off the bones and place it in a bowl.

Heat the pan and add the olive oil and crushed cumin and fennel seeds.

Add the tomato puree and the chicken stock and allow to simmer in medium flame for 5-10 mins.

Add the pulled chicken without the bones to this sauce and simmer for 5 mins.

Transfer the butter chicken to serving bowl and now add the butter or ghee.

Garnish with chopped coriander leaves .
