American Chopsuey is one of the famous indo-chinese dishes that I loved to order when I used to go to restaurants in Chennai. I was thinking it got the name coz its famous or invented in America and only when I came here I realized that is not the case. I could not find it on the menu in any of the restaurants here. Very recently I got the urge to prepare it at home . Usually this is made with deep fried noodles but in my healthy version I have substituted with crispy chow mien noodles . Also tried adding tomato paste instead of tomato ketchup as is loaded with sugar and preservatives.
This dish is dedicated to my friend Brinda.
Ingredients
- 1 packet chow mein noodles( LA Choy)

- 1-2 cups of stir fry vegetables
- 2-3 Chicken pieces(optional)
- 5-10 raw shrimp (optional)
- ½ large onion thinly sliced
- 1 teaspoon chopped garlic
- 1 teaspoon chopped ginger
- ½ teaspoon chili flakes
- 1 tsp chili sauce
- 3-4 tablespoon of tomato paste/tomato puree
- 2-3 teaspoon sugar/ honey
- 1 teaspoon vinegar( rice wine)
- 1 tsp soya sauce
- 1 tsp stir fry sauce(optional)
- 1 teaspoon olive oil/ sesame oil
- ½ cup water/vegetable stock/chicken stock
- 2-3 teaspoon cornstarch( acc to thickness)
- 1 egg /person/plate
- Chopped spring onions for garnish
- salt to taste
Directions
- Heat the oil in a pan and stir in the chili flakes, chopped ginger and garlic .

- Now add the onions and fry till its translucent and then add the stir fry vegetables.
- (optional step)In another pan cook the chicken pieces in water (5-10 mins)and once cooked shred the chicken pieces and add it to the stir fry vegetables along with the shrimp.
- Now mix the chili sauce, soya sauce, tomato paste, salt, stir fry sauce,vinegar.
- Pour some water/ chicken stock(water used to boil chicken)
- In a cup mix the cornstarch with little cold water and stir continuously after pouring it in the pan.
- Reduce the flame and allow to cook for 2-5 mins till the sauce gets thick.
Add the honey finally. - Meanwhile cook the egg in a frying pan carefully making sure that you dont break the yolk and its not fully cooked.( You can close the pan with a lid and allow the egg to cook evenly)
Assembly
- Place the crispy chow mein noodles on the plate.
- Pour the sauce with the vegetables over it.
- Top of the sauce with the semi fried egg.
- Garnish with spring onions and its ready to serve.
Benefits of chow mein noodles
- When compared to other noodles this is made with wheat flour and has good amount of fiber in it.
- This noodles are quick cooked ,so they are light and crunchy.
- They can used as any regular noodles without cooking them in boiling water. Just soak it for 5-10 mins in warm water.
- Can used as a topping for soups or salads.
